Summary
Key Determinants of Restaurant Selection, Satisfaction, and Loyalty
Highlights
Multiple studies consistently identify food quality, service quality, price, and ambiance as the primary variables influencing a guest's choice of restaurant. While some researchers emphasize food and service as paramount, others highlight the importance of physical environment, menu variety, and reputation in the decision-making process.
Guest satisfaction is fundamentally linked to service quality, food quality, and restaurant atmosphere. Although findings vary across different regions, most literature suggests that higher satisfaction levels positively influence revisit intentions and guest loyalty. Aspects such as responsiveness of staff, food presentation, and interior design play significant roles in building this satisfaction.
Individual characteristics—including age, gender, education, and income—significantly affect how guests perceive restaurant quality and satisfaction. Research indicates that these socio-demographic variables act as mediators in consumer behavior, meaning that different groups prioritize different attributes when evaluating their dining experience.
Based on existing literature, the study proposes three final hypotheses: (1) Staff professionalism, service speed, ambiance, comfort, food quality, and price all influence guest satisfaction; (2) Guest loyalty is dependent on the level of satisfaction; (3) Satisfaction levels are further moderated by the gender, age, education, and income of the guests.
